Often considered to be one of the earliest comfort foods, pea and ham soup is the perfect dish for cosying up in the winter but it can be enjoyed throughout the year.

Ingredients

  • 1 carrot (chopped)
  • 1 onion (chopped)
  • 1⁄2 leek (chopped)
  • 2 bay leaves
  • 1.5 litres vegetable stock
  • 200 g Birds Eye Peas
    Deliciously Tender Garden Peas
  • 200 g cooked, chopped ham
  • salt
  • freshly ground black pepper
  • fresh parsley (chopped, to serve)

Method

  1. Before using the peas, cook the carrot, onion, leek and bay leaves in the vegetable stock until the vegetables are soft.
  2. Add the peas and bring back to the boil.
  3. Remove from the heat and blend in a liquidiser until smooth, with the soup consistency of your choice.
  4. Reheat gently, add the ham and season to taste
  5. Serve sprinkled with parsley
Serving tip

Finish with a spoonful of cream and top with croutons
