Simple Green Pea Soup Recipe

A simple yet delicious green pea soup is one of the quickest ways to enjoy peas. This comforting meal is great for lunch or dinner on a cold day, and packs plenty of nutritional benefits.

Ingredients

Knob of butter
Dash of cream
1 Small 
Onion (peeled and chopped)

Method

  1. Melt the butter in a pan before adding the diced onions. Cook until they have softened.
  2. Add the frozen peas with the 500ml of vegetable stock.
  3. Bring to the boil and leave to simmer for 3 minutes before mixing in a liquidiser until you have a smooth mixture.
  4. Add a dash of cream and blend it in.
  5. Season to taste and enjoy.

To make this soup extra indulgent, add a swirl of fresh cream and serve with a warmed bread roll.
