They say that breakfast is the most important meal of the day and that you should feast like a king in the morning. But being creative with your morning meals and having a diverse menu can prove challenging; especially when you’re pressed for time. So we’ve compiled a few of our favourite breakfast and brunch ideas to inspire you and help you have wholesome, healthy meals.

These are all savoury recipes, so if you’re a sweet tooth we recommend trying our classic pancakes with any topping you prefer. 

Easy Breakfast Ideas

Boiled Egg with Waffle Soldiers

The morning boiled egg and soldiers is such a classic meal that we’re a bit anxious of suggesting an alternative.

But swap your regular toast for a potato waffle and you (or the kids) might never go back.

This recipe requires no cooking skills and takes minutes to make.

Garden peas omelette

Omelettes are a great way to have a nutritious start to the day. You can pack them with veg, protein, dairy in pretty much whatever combination you like.

This omelette will make sure you are getting one of your 5-a-day nice and early, simply by adding some of our delicious garden peas on the side.

Skip the sugary cereal for a wholesome breakfast or brunch.

Waffles, bacon and egg

Sometimes starting your day with a healthy breakfast just won’t do, and what says ‘breakfast treat’ better than a fry-up? Discover our own version of the classic where we swap the hash brown with a delicious Birds Eye Potato Waffle.

We also propose grilling the bacon rather than frying it, because it’s a healthier cooking method.

Cook some mushrooms up along with a tomato, before stacking it all on the waffle and enjoy!

Green Crêpes

Having crêpes for breakfast sounds rather indulgent, but I bet you never thought you can “healthify” them by adding peas into the mix! Plus, the kids will love the green colour and won’t even realise they’re having their veg.

Serve the crepes with a savoury filling of your choice, such as cheese, mushrooms, ham, or smoked salmon.

If you’re pressed for time in the morning, you can always make the batter the previous night and leave it in the fridge.  All you need to learn is how to master the crêpe flip! 

Pea and tuna kedgeree

If you’re planning a brunch and are looking for something a little more adventurous than the classic pancake or eggs royale, why not try a kedgeree?

This flavourful, hearty dish might have been a treat for the royals back in day, but that doesn’t mean it can’t become a family go-to meal.

You can swap the tuna with smoked haddock if you prefer and make it as spicy as you can handle.

Potato waffle with avocado and poached egg

This recipe is the perfect mix of naughty and nice. Poached eggs and avo are a brunch staple but swapping the usual piece of toast with a potato waffle makes it feel like a treat. Poaching eggs might require some practice so don’t worry if you don’t master it from the beginning. For the best results, you should use fresh eggs.

If you’re in a hurry and don’t want to sacrifice on yumminess you can poach the eggs in advance, as they can last up to 2 days in the fridge. The trick is to undercook them slightly so when reheating (microwave or immerse them in simmering water for 1-2 mins), they finish cooking.

Pea, Stilton and Potato Frittata

There’s something about a frittata that makes it feel like it’s a special occasion. Potatoes, cheese and eggs are a match made in heaven and our recipe proves just that. If you want, you can swap the stilton with other types of cheese like brie or cheddar.

The peas and the pepper will add a nice burst of colour and vitamins. This recipe will be ready in 20 mins. And, there’s nothing stopping you from making this recipe for lunch, breakfast and dinner.
