Ingredients

  • 1 courgette sliced
  • 1 red onion sliced
  • 1 tablespoon olive oil
  • 150g dried couscous
  • 175ml boiling water
  • 1 Birds Eye BTP Cod
    2 Cod Fillets In A Tomato and Rosemary Sauce
  • 1/2 Sliced Red Pepper
  • 1/2 Sliced Yellow Pepper

Method

  1. Preheat oven to 190deg, gas mark 5
  2. Cook the Bake to Perfection Cod (as per pack instructions)
  3. Mix the vegetables with the olive oil, put on a baking tray and roast in the oven for 30 minutes or grill on a medium to high heat for 10 minutes
  4. Place the couscous in a bowl and pour over the boiling water.
  5. Cover for 5 - 10 minutes, then fluff with a fork.
  6. Mix the grilled veg in with the cous cous and serve with the Cod and Mediterranean sauce over the top.
