Ingredients

  • 100 g of dried couscous
  • 100 g of Birds Eye frozen Peas (cooked and chilled)
    Deliciously Tender Garden Peas
  • 1 small onion (finely chopped)
  • 3 tablespoons fresh lemon juice
  • 2 medium tomatoes (skinned, deseeded and chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 2 tablespoons olive oil
  • salt
  • Freshly ground black pepper

Preparation

  1. Soak the couscous in 1 litre of boiling water for 45 minutes
  2. Drain the couscous well and mix with the remaining ingredients. Season to taste and serve
Serving tip

Try adding a handful of frozen Birds Eye Peas to any salad 15 minutes before serving
