Ingredients

of dried couscous

of Birds Eye frozen Peas (cooked and chilled)
Deliciously Tender Garden Peas

small onion (finely chopped)

tablespoons 
fresh lemon juice

medium tomatoes (skinned, deseeded and chopped)

tablespoon 
fresh parsley (chopped)

tablespoons 
olive oil
salt
Freshly ground black pepper

Method

  1. Soak the couscous in 1 litre of boiling water for 45 minutes
  2. Drain the couscous well and mix with the remaining ingredients. Season to taste and serve

Serving tip

Try adding a handful of frozen Birds Eye Peas to any salad 15 minutes before serving
