Chickpea & Spinach Curry

Ingredients

garlic clove

red chilli
1 knob 
fresh root ginger
1 medium 
onion

olive oil

curry paste
100g 
low fat plain yogurt

Method

  1. Fry off diced garlic, ginger, chilli and onion in olive oil until softened without browning
  2. Add curry paste
  3. Cook chickpea & spinach mix as per pack instructions
  4. Mix yogurt into curry to make creamy
  5. Stir in chickpea & spinach mix
  6. Place in bowl, serve with rice and enjoy!
