Creamy Cod Pasta Carbonara Recipe

Who doesn’t love a creamy, indulgent bowl of pasta carbonara? This comforting and rich dish is a classic recipe for a reason, but because of its high fat and calorie content it might not make the weekday meal rotation. So, why not try a lighter version where you swap the bacon for tasty, nutritious cod fillet and a good sprinkle of veg.

Our quick and creamy cod pasta carbonara mixed with the delicious peas, broccoli, cauliflower and carrots from Birds Eye Field Fresh Country Mix will satisfy even the fussiest of eaters. The veg in our mix is rich in vitamin C and vitamin A, turning a naughty meal into a very nice one.

Ingredients

Egg Yolk
1 pack  
Birds Eye Field Fresh Country Mix
1 tsp 
Butter
1 crushed 
Garlic Clove
2 
Cod Fillets (diced)
150g  
Double Cream
3 tbsp 
Grated parmesan
200 
g
 
Spaghetti
1/2 
Small bunched chives snipped or chopped

Our method

  1. Cook the spaghetti (as per pack instructions).
  2. Meanwhile, melt the butter in a small pan, add the garlic, diced cod fillets and gently sizzle for 3 min. Remove from the heat and place in bowl.
  3. Lightly beat the cream, eggs, softened garlic and half the Parmesan in a bowl. Stir in the cod fillets cut into cubes
  4. Drain the pasta well and put it back in the pan. Don’t worry if you get some of the water in the sauce: pasta water actually helps thicken the sauce and gives it more flavour.

  5. Add the cod mixture and the chives, then toss the pan several times so the heat from the pasta lightly thickens the sauce.
  6. Serve with the remaining parmesan and plenty of black pepper.

    Very yummy, everyone enjoyed and I used single cream as I didn’t have double at the time, so not as thick, but very nice. We will make again and try with double cream. Oh yes, no garlic as i hate garlic
