If you're looking to diversify your salads, why not try this flavoursome and meat-free mexican salad bowl? Even though it's meat-free it's still full of protein because it's made using our new Green Cuisine Meat-Free Mexican Style Mix. This meat-free alternative has a chockful of pea protein.

Ingredients

1/2 
tin of drained Kidney Beans

TBSP Birds Eye Supersweet Sweetcorn
Birds Eye Supersweet Sweetcorn 690g

Onion, chopped
1 
large Tomato, diced
1 handful of  
Mixed Lettuce
100g 
of cooked Rice
2 TBSP 
Sour Cream

Our method

  1. Place lettuce leaves in a bowl and top with Mexican style mix, sweetcorn (cook according to pack cooking instructions), drained kidney beans, diced tomatoes and some cold cooked rice. Drizzle over some sour cream and garnish with grated vegan cheese & flat leave parsley.
