1/4 small cucumber
1/2 red onion, sliced
1/2 chilli, sliced
cherry tomatoes, halved, 100
1/4 can black-eyed beans
2-4 sprigs fresh coriander, chopped
1/2 lemon, juiced
- Add the cucumber, avocado, red onion, chilli and tomatoes to a bowl along with the black-eyed beans, chopped coriander and lemon juice.
- Mix all the ingredients together, season to taste, then serve.
