Zingy Bean Salad Recipe

This deliciously fresh and zingy salad is the perfect accompaniment to our Fibre Boost Easy Chicken Enchiladas recipe, as well as our Breaded Cod Fillets or Original Chicken Chargrills. A flavour explosion!

Ingredients

1/4 small cucumber 
1/2 avocado 
1/2 red onion, sliced 
1/2 chilli, sliced 
cherry tomatoes, halved, 100 
g
 
1/4 can black-eyed beans 
2-4 sprigs fresh coriander, chopped 
1/2 lemon, juiced 

Our method

  1. Add the cucumber, avocado, red onion, chilli and tomatoes to a bowl along with the black-eyed beans, chopped coriander and lemon juice. 
  2. Mix all the ingredients together, season to taste, then serve.
