A Fish Finger Sandwich Portuguese style. Potato Shred, Onion, Black Olives, Scrambled Egg mixed with Parsley, topped with chopped Fish Fingers in Sour Dough.

Ingredients

  • 1 Egg
  • 1 Potato Shred
  • 1 small Onion
  • 1 tablespoon Fresh Parsley
  • 2 teaspoons Sunflower Oil
  • 4 Birds Eye Fish Fingers
    10 Omega3 Fish Fingers
  • 4 slices Sour Dough
  • 5 Black Olives

Method

  1. Peel and shred potato finely. Boil in water
  2. Cook Fish Fingers as per pack instructions
  3. Sautee diced onions in pan with sunflower oil to carmelise
  4. Mix egg with milk for scrambled egg. Gradually add to pan with onion, adding shredded potato
  5. Cook whilst mixing until cooked
  6. Mix through black olive and parsley
  7. Assemble on sour dough bread topping with Fish Fingers
