Heat an oiled saucepan adding the bacon and onions cooking until golden.
Add the flour stirring continuously to making a roux, slowly whisk in the milk until the sauce has started to thicken, add the parmesan and mozzarella, once the cheese has melted leave to cool down.
Add the mash and Birds Eye Garden Peas to the sauce and mix well.
Heat an oiled frying pan and add 4-6 tbsp (depending on the pan size) of the fritter mix around the pan. Cook on medium heat for 3 minutes on each side.
