Ingredients

  • 1 bag Mexican Bean Mix
    Birds Eye Mexican Bean Mix
  • 2 large potatoes
  • 1 sprig fresh rosemary
  • 2 egg yolks
  • 5 twists black pepper
  • 1 medium diced onion
  • 1 crushed garlic clove
  • 2 teaspoons olive oil
  • 4 brown rolls
  • 1/4 head lettuce
  • 1 thinly sliced courgette
  • 1 medium sliced red onion

Method

  1. Sautee diced onions and garlic until soft
  2. Peel, dice and boil potatoes
  3. Mash potatoes
  4. Boil Mexican Bean mix as per pack instructions
  5. Mix bean mix, potatoes, onion and garlic and egg yolk. Season with chopped rosemary and black pepper
  6. Shape into burgers, leave to rest an hour
  7. Slowly pan fry in very little oil in a non stick frying pan until golden
  8. Serve in a bun with lettuce red onion and courgettes
