Ingredients

  • 1 pack Chickpea and Spinach Mix
    Birds Eye Chickpea and Spinach Mix
  • 4 Reduced Fat Pork Sausages
  • 1 small onion
  • 1 stick celery
  • 1 carrot
  • 1 teaspoon olive oil
  • 1 vegetable stock cube
  • 250 ml boiling water
  • 4 tablespoons low fat plain yoghurt

Method

  1. Fry off diced onion, celery and carrot in olive oil without browning
  2. Grill sausages
  3. Dissolve stock cube in boiling water and to pan
  4. Add chickpea & spinach mix into pan simmer for a further 5 minutes
  5. Stir through yogurt once off the heat
  6. Serve with grilled sausages
  7. Enjoy!
