The Yellowfin sole lives in the North Pacific. Like the Common dab, plaice, and sole, it belongs to the right-eyed flatfishes.
Its larvae initially have the typical fish shape, but during the subsequent transformation into a flatfish, the left eye migrates to the right, later upper, side of the body. The fish then adopt a bottom-dwelling lifestyle and feeds on small animals such as worms, mussels, and brittle stars.
Yellowfin sole have yellowish fins with faint dark bars. The upper side of the body is brownish, while the underside (so-called blind side) is pale. A distinctive feature of the genus “Limanda”, to which the Yellowfin sole belongs, is the semicircular curved lateral line above the pectoral fin, which clearly distinguishes it from other flatfish species. The Yellowfin sole can grow up to 49 cm long and live up to 34 years, but it is usually caught earlier.
The lean flesh of the Pacific sole is white and delicate with small flakes and has a mild, slightly sweet taste.
