Ingredients

cloves garlic, peeled and crushed

light tahini paste
juice of 1 large lemon (add more if preferred)

chilli powder

sea salt and black pepper

Our method

  1. Add the peas to a pan of boiling water and cook according to cooking instructions on pack. Drain the peas and put in a food processor along with all the other ingredients; mix well until a paste is formed. Season with sea salt and black pepper according to taste. Serve the green pea hummus in a dipping bowl, form a small hole in the centre of the mixture and add a tablespoon of oil and lightly dust with chilli powder. Serve with crudités or toasted pitta bread.
The less water you use when cooking peas, the less vitamin C is lost. Steaming helps to conserve this vitamin. When boiling frozen peas, add enough water to cover, bring to the boil and then cover and simmer for 3 minutes. To microwave 227 grams (8oz) of frozen peas add 15ml (1 tablespoon) of water, place in a non metallic container and cover. Cook on full power for 4 minutes (750W) or 4 1/2 minutes (650W).
