The Ultimate Fish Finger Sandwich

The Ultimate Fish Finger Sandwich

Ingredients

  • 3 Birds Eye Fish Fingers
  • 1 crusty flat French roll or a piece of Ciabatta bread
  • 1 poached egg
  • 1 small tomato (sliced)
  • Shredded lettuce
  • 1tsp of low fat yoghurt
  • ¼ an avocado (sliced)
  • Dill (chopped)
  • Lemon Juice

To Prepare

  • 1 Grill the Birds Eye Fish Fingers

  • 2 Halve and toast bread

  • 3 Poach egg so it is still soft in the middle, but not runny

  • 4 Mix the shredded lettuce with the yoghurt and season with dill and lemon juice

  • 5 Spread both pieces of bread with lettuce mixture

  • 6 Place sliced tomato and avocado on one piece of bread and top with the grilled fish finger and egg

  • 7 Carefully lay the other piece of bread on top

Top Tip

  • Try not to eat this in your best clothes as it might drip a bit, but it sure is fun and yummy!!!!
