Simply Chicken Salad

Ingredients Simply Chicken Salad

  • 2 Birds Eye Simply Chicken portions
  • 100g of mixed salad leaves
  • 6 cherry tomatoes (cut in half)
  • ¼ a cucumber (cut into chunks)
  • 1tbsp of parmesan (optional)

Ingredients Dressing

  • 6 olives (sliced)
  • 1tbsp of capers (rinsed, optional)
  • 2tbsp of olive oil
  • 1tbsp of basil (chopped)
  • 2tbsp of lemon juice

To Prepare

  • 1 Cook the Birds Eye Simply Chicken as per pack instructions

  • 2 Mix the salad leaves, tomatoes and cucumber together in a large serving bowl

  • 3 Mix together the capers, oil, olives, basil and lemon juice and season to taste

  • 4 Slice the cooked chicken and mix with the salad

  • 5 Quickly toss the salad with the dressing and top with grated parmesan
