Fish Finger Kebabs

Fish Finger Kebabs

Ingredients Kebabs

  • 1 pack of Birds Eye Fish Fingers
  • 1 pack of frankfurters
  • 10 cherry tomatoes (halved)

Ingredients Tomato Salsa

  • 3-4 ripe tomatoes (quartered and deseeded)
  • 2 garlic cloves (peeled and finely chopped, optional)
  • 1 red onion (peeled and chopped)
  • 15ml of olive oil
  • 15ml of lime juice
  • 15ml of fresh coriander (chopped)

To Prepare the Kebabs

  • 1 Cook the Fish Fingers and frankfurters as per pack instructions

  • 2 Cut the Fish Fingers into two pieces. Cut the frankfurters the same size and score the top of each using a knife to give a criss cross pattern

  • 3 Thread the tomato half, frankfurter and fish finger onto small kebab skewers

  • 4 Mix all the salsa ingredients together. Serve the kebabs garnished with lime and herbs

Top Tip

  • Add lime wedges and sprigs of fresh herbs like chervil or parsley to garnish
