Field Fresh Country Mixed Vegetable Curry

Ingredients

  • 375g (½ pack) Birds Eye Field Fresh Country Mixed Vegetables
  • ½ large onion- sliced
  • 1 tbsp of sunflower oil
  • 2 dsp of Korma curry paste
  • ½ can of low fat coconut milk

To Prepare

  • 1 Cook the Field Fresh Country Mix vegetables as per pack instructions and drain

  • 2 Cook the sliced onion until golden brown

  • 3 Add the vegetables, curry paste and coconut milk to the onion pan and coat well

  • 4 Bring to the boil and serve
