Crispy Chicken Fajitas

Serves: 4 - Ready in: 30mins

Crispy Chicken Fajitas

Ingredients Fajitas

  • 3 Birds Eye Crispy Chicken
  • 1 green pepper (cut into strips)
  • 1 red pepper (cut into strips)
  • 1 large red onion (cut into strips)
  • 4 tortilla wraps

Ingredients Salsa

  • 1 small tomato
  • 1 small red onion
  • Sprig of coriander
  • 1 small chilli
  • Dash of lime juice

Ingredients Guacamole

  • 1 avocado
  • ½ red onion (chopped)
  • 1 red chilli
  • 1 garlic clove (crushed)
  • Dash of lemon juice
  • Coriander (chopped)

Method Fajitas

  • 1 Cook the Crispy Chicken as per pack instructions and slice

  • 2 Gently fry the onions and peppers

  • 3 Heat the tortillas as per pack instructions

  • 4 Fill the tortillas with the peppers, onions, a few slices of chicken and guacamole

  • 5 Serve with a small pot of salsa

Method Salsa

  • 1 Chop all ingredients

  • 2 Season with the lime juice and milled pepper

Method Guacamole

  • 1 Finely dice 1 red chilli add to the chopped onion

  • 2 Cut the avocado length ways, remove the stone, remove the flesh from skin with a dessert spoon and roughly chop

  • 3 Add all the ingredients into a bowl, mix and season to taste
