100% Beef Quarter Pounder with Cool Cucumber and Soya Bean Potato Salad

Ingredients Burger

  • 2 Birds Eye 100% Beef Quarter Pounders
  • 2 ciabatta rolls with olives
  • 150g of low-fat natural yoghurt
  • 1 lemon,(juiced)
  • 1 small handful of chopped fresh coriander
  • ½ cucumber (sliced)
  • 1 handful of mixed salad leaves

Ingredients Salad

  • 200g Birds Eye Soya Beans
  • 250g of baby new potatoes
  • ½ medium red onion (finely sliced)
  • 2tbsp of olive oil
  • 1 sweet pickled gherkin
  • 2½tbsp of gherkin juice
  • 1 heaped tsp of English mustard
  • 2 slices of salami

Method Burger

  • 1 Mix the yoghurt and lemon juice with the sliced cucumber and chopped coriander, season to taste

  • 2 Grill the burgers as per pack insctructions from frozen, toast the ciabatta rolls

  • 3 Place the burgers in the buns with the sauce on top

Method Salad

  • 1 Cook the potatoes, drain and slice

  • 2 Cook soya beans as per pack instructions

  • 3 Chop the salami

  • 4 Make the dressing with all the remaining ingredients, season with salt and pepper

  • 5 Mix the potatoes, beans and salami with the dressing and leave for 1 hour to marinate. Place in a bowl and serve

Top Tip

  • Complement a flame grilled burger with the refreshing taste of yoghurt and cucumber…one of the coolest dishes of the summer!
