Baked Birds Eye Meatballs with grilled pitta breads and tzatziki

Baked Birds Eye Meatballs with grilled pitta breads and tzatziki

Ingredients

  • 1 x pack Birds Eye Meatballs
  • 4 x large pitta bread
  • 1 x bag of mixed leaf salad
  • 150g x Greek yogurt
  • 2 x cloves chopped garlic
  • ½ x peeled and diced cucumber
  • Juice of half a lemon

Method

  • 1 Peel the cucumber, remove any seeds, dice into 1 cm cubes and leave to drain on a kitchen towel

  • 2 Remove the meatballs from packaging and cook as guided from pack

  • 3 Score the pita breads to create an envelope effect and toast for one minute both sides under a hot grill

  • 4 Mix the drained diced cucumber with the yogurt, garlic and lemon juice and season to taste to make the tzatziki

  • 5 Remove the meatballs from the oven and leave to cool slightly. Then place in a bowl and crush slightly with a fork

  • 6 Take the pitta breads and add some of the salad leaves into the breads and separate the meatball mix between the four pittas

  • 7 Finish with a spoonful of tzatziki
