Peri Peri Chicken Chargrills with spicy rice and Vegetable Kebabs

Serves 4. Approx. 415 Calories and 17g Fat per serving

Ingredients

4 Peri Peri Chicken Chargrills

For the Vegetable Kebabs:
  • 2 x large courgettes, sliced
  • 2 x small red onions, cut into wedges
  • 120g (4oz) cherry tomatoes
  • 30ml (2tbsp) sunflower oil
  • Kebab Sticks
For the Spicy Rice:
  • 150g/6oz rice
  • 1 chicken stock cube
  • 1 bay leaf
  • pinch cinnamon
  • 1 tsp cumin seeds
  • pinch medium curry powder

Method

  1. Cook the Peri Peri Chicken Chargrills as per on pack instructions.
  2. Meanwhile chop the other ingredients.
  3. Place the vegetables alternatively on kebab sticks.
  4. Bring a large pan of water to the boil.
  5. Add the rice to the pan along with the chicken stock cube, bay leaf, cinnamon, cumin seeds and curry powder. Simmer gently for 10-12 minutes or until the rice is tender.
  6. Brush the vegetables and kebabs with oil and grill under a hot grill, turning once, for about 10 minutes.
  7. Drain the rice and transfer to a serving plate. Serve the Peri Peri Chicken Chargrills on a plate with the spicy rice and vegetable kebabs.

Cracked Black Pepper with Mushroom Pasta

Serves 4. Approx. 480 Calories and 6g fat per serving

Ingredients

  • 4 Birds Eye Cracked Black Pepper Chicken Chargrills
  • 880g of fettuccini (cooked)
  • 1 jar of mushroom sauce

Method

  1. Cook the Birds Eye Cracked Black pepper Chicken Chargrills as per pack instructions
  2. Heat the mushroom sauce
  3. Cut the chicken into pieces and mix with the pasta serve and top with mushroom sauce

Original Chicken Chargrill Caesar Salad

Serves 4. Approx. 350 Calories and 24g fat per serving

Ingredients

  • 4 Birds Eye Original Chicken Chargrills
  • 1 large bag of mixed green salad
  • 2 thick slices of white bread, cubed and shallow fried in 20ml (2dsp) olive oil
  • 25g (1oz) thinly sliced or grated fresh parmesan
  • 15ml (1tbsp) olive oil
  • 15ml (1tbsp) fresh chopped basil, or 2.5ml (½tsp) dried basil

Method

  1. Cook the Birds Eye Chicken Chargrill to pack instructions until piping hot and cooked right through.
  2. Slice the Chicken Chargrill into bite size pieces. Mix with salad, top with croutons and parmesan.
  3. Mix the olive oil with the chopped basil and pour over.

Lime & Chilli Chicken Chargrill Fajitas

Serves 4. Approx 420 Calories and 16g fat per serving

Ingredients

  • 4 Birds Eye Lime & Chilli chicken Chargrills
  • 4 Floury Tortillas
  • 150g (6oz) lettuce, shredded
For the Coriander and Chilli Rice:
  • 150g (6oz) White and Wild rice
  • 5ml (1tsp) Chilli Powder
  • 5ml (1tsp) Ground Coriander
  • 1 small onion, chopped
  • 15ml (3tbsp) Fresh Coriander, chopped
  • 1 Small Fresh Red Chilli, chopped
  • 15ml (1tbsp) oil
  • 750 ml (1 1/4pt) Water
For the salsa:
  • 1/2 small onion, chopped
  • 1/4 red pepper
  • 1/4 green pepper
  • 30ml (2tbsp) chopped fresh coriander or 1/2 tsp. dried
  • 200g (8oz) 1 tin chopped tinned tomatoes, drained
  • 15ml (1tbsp) chilli sauce
  • 10ml (2tsp) lemon juice or vinegar
  • 2.5ml (1/2tsp) cumin
  • 15ml (1tbsp) olive oil
  • 15ml (1tbsp) tomato puree

Method

  1. Cook the Birds Eye Lime & Chilli Chicken Chargrills according to pack instructions.
  2. Warm the Tortillas spread with the salsa.
  3. Place Chicken Chargrills and lettuce into the tortillas and serve with the coriander rice.
